3 cups strawberries from Florida, cut into thin slices
½ A glass of strawberry jam in Florida
Florida honey to drizzle
1 tablespoon natural Florida sugar
6 ounces goat cheese
1 egg, beaten
2 (9-inch circles) prepared pie crusts, homemade or store-bought
Cut three equal-sized circles from each of the two larger pie crusts. Place all the cutouts on one or two lightly oiled baking cookie sheets. Spread an even amount of strawberry jam in the center of each of the cuts. Have fun evenly, arranging or layering the sliced strawberries around the inside of all the cutouts, leaving room for the peel. Fold the crust over yourself completely to form the edge of the crust. Crush an even amount of goat cheese on each of the strawberry cakes. Clean the edges of the crust of each of the filled tarts with the beaten washed egg. Lightly sprinkle the sugar evenly over all the crusts where they were just spread with the beaten egg. Place the tart in the preheated oven. Cook the strawberry cakes for about 15 to 20 minutes or until the crust turns golden brown and the strawberries are foamy. Remove the strawberry tart from the oven and allow to cool slightly. Lightly pour strawberry cakes with Florida honey. Serve with fresh whipped cream and extra honey if desired.
