Florida Mango Chutney

2 mangoes from Florida, in small cubes

2 tablespoons lime juice Florida Key

1 tablespoon Florida orange blossom honey

⅓ A glass of onion, finely diced

3 tablespoons white vinegar

¼ A cup of sweet chili sauce

¼ teaspoon red pepper flakes (or more, to taste)

½ teaspoon fresh ginger, grated

½ teaspoon curry powder

1 ½ tablespoon olive oil

Sea salt and fresh ground pepper, to taste

Heat a pot over medium heat. Add butter and sauté onions until soft and translucent, about 5 minutes. Add the remaining ingredients, bring to a boil, then simmer and cook for 6-8 minutes, stirring often. Remove from heat and allow to cool, store in refrigerator. Serve chilled or at room temperature.
