Florida Flatbread with Tomatoes and Sweet Peppers

1 large Florida pepper (red, yellow, green or ⅓ of all 3 colors), seeds and cut into thin slices

2 medium Florida tomatoes, cut into thin slices

2 medium or 1 large baked bread or pizza crusts

2 cups mozzarella cheese, crushed (or your favorite)

¼ A glass of fresh basil torn by hand

½ A glass of parmesan, grated

5 cloves fresh garlic, minced

1 tablespoon olive oil

Sea salt and fresh ground pepper, to taste

Preheat oven to 375 degrees. Spread the olive oil and garlic evenly on the flat cakes. Spread evenly three-quarters of the two types of cheese on the flatbreads. Spread the peppers and tomatoes evenly over the cheese. Add the remaining cheese to the top of the flat bread. Lightly season the breadcrumbs with salt and pepper. Bake flatbreads on a biscuit sheet for 7 to 10 minutes until the cheese is melted and bubbly. Remove the loaves from the oven and garnish with the torn basil by hand. Cut the flat bread into several portions and serve warm.
